The history of tea-growing on the territory of the modern city Nankin dates from the Tang Dynasty (618-907). Tea plantations spread out in three suburbs and five provinces by the great river Yangtze. Gentle young buds with one or two just unfolding leaves are processed using a complicated multistage technology. Newly picked raw material should be put on bamboo mats and kept in a cool, shady place for several hours to wither. Then tea leaves are fired in boilers at high temperature, always stirred with a special little broom and after that they are put in kettles and rolled by hand not longer than one minute. Tealeaves take the shape of regular strips and white hair begins to be visible there. The final stage of tea processing is the stage of hot drying in special bamboo smoking sheds. By brewing emerald-green delicate, covered with white hair strips of tealeaves turn into transparent, clear, gently-green infusion with golden glitters, mild steady aroma and fresh taste which lefts pleasant a sweetish aftertaste.
