Pu-erh takes up a special place in the Chinese classification, and is one of the Chinese 10 renowned teas. The tea is produced out of raw leaves of the broad-leaved varieties grown on the south-west of Yunnan Province. During processing the leaves undergo a special procedure of sprinkling and soaking (wet-piling). Microorganisms developing in their growth medium naturally produce enzymes. This promotes complex chemical reactions in the cells of the tea leaf. The tea is compressed into the shape of small hemispherical cups (cakes) colored dark reddish-brown. The tea’s rich dark-red infusion with a full-bodied, pure, sustained aroma and a ripe, mild taste ends in a lasting slightly sweet aftertaste.
