Pu-erh takes up a special place in the Chinese classification, and is one of the Chinese 10 renowned teas. The tea is produced out of raw leaves of the broad-leaved varieties grown on the south-west of Yunnan Province. During processing the leaves undergo a special procedure of sprinkling and soaking (wet-piling). Microorganisms developing in their growth medium naturally produce enzymes. This promotes complex chemical reactions in the cells of the tea leaf. Chen Nian Pu Er Tuo Cha can be compressed into a conventional shape of flowers, as well as fancy ones, of buds, irregular ovals, or even bricks. The tea yields a rich dark red infusion with a sustained full-bodied aroma and a ripe mild taste, ending in a lasting slightly sweet aftertaste.
