Anxi County has long since been referred to as “the treasure-trove of the best tea trees”, with  the Huang Dan (Golden Sunrise) kind taking up a special place among them. The world-famous Huang Jin Gui tea is produced from its fresh leaves. During picking, 2-4 robust young leaves are plucked from the tops of young flushes. The tea production technology is rather complicated and requires special skill. It consists of airing, cooling, withering, shaking, firing, curling, sphere rolling and hot drying. The firm leaves of Huang Jin Gui are curled tightly, but daintily. On their glossy surface through saturated green, golden- yellows peak through. The clear orange-yellow infusion combines a refined long-lasting aroma, a pure light scent of osmanthus and a pleasant fresh flavor carrying slightly sweet notes.
