Xi Hu Long Jing (Dragon's Well by Xi Hu Lake) is widely known in China and is considered one of the best tea sorts in the world. The tea grows in particularly favourable nature conditions on hills close to Xi Hu lake – a pearl of China, celebrated in Chinese poetry. The uniqueness of Xi Hu Long Jing tea is in special sort of tea trees with tender small leaves, which contain high percentage of amino acids and vitamins and in usage of a special technology of plucking and processing of the tea leaves. The processing technology is very labour-intensive, only seasoned masters are entrusted with it. Especially uniqueness of technology of manual frying provides a specific form of tealeaves. When brewed the tealeaves stay vertical in water, they plunge and then again come to surface as if they are alive, they are like an open bud of a young orchid and in elegance can compete with emerald bamboo.
