Bai Mu Dan, one of the most exquisite and rare sorts of white teas, is produced exclusively in Fujian Province. The tea leaves picked in early spring are processed on the day of the picking to ensure the tea’s keeping its freshness. During processing of Bai Mu Dan, producers do not apply harsh heat treatments neither do they use any rolling methods. Delicate fresh flushes are left to dry slightly in the open air first and then in special ovens. Green little leaves of Bai Mu Dan and the tea buds are covered with silvery white hairs, their shape resembling flowers. After brewing this tea, one gets the impression that the leaves are supporting the delicate tips, as if a flower bud is just about to open. The clear pale-apricot infusion features a mild taste harmoniously followed by a slightly sweet aftertaste.
